Honey Rolls Draft

What you need

How I make it
Pour the water into a large mixing bowl and sprinkle the yeast over it. Wait about 5 minutes, until the yeast starts to bubble gently.
Add the honey, salt and egg and stir until smooth.
Add the flour and stir until a dough forms.
Knead for 7-8 minutes, by hand or with the dough hook of a stand mixer, until elastic.
Transfer the dough to a large bowl, cover with a towel or plastic wrap and let rise in a warm spot for about 2 hours, until doubled.
Punch down the dough and divide it into 12 equal pieces.
Shape into round rolls and set them on a baking sheet lined with lightly greased parchment paper.
Cover with a clean towel and let rise again for about 20 minutes. Meanwhile, preheat the oven to 400°F (200°C).
In a small bowl, mix the butter and honey and gently brush it over the risen rolls.
Bake for 10-13 minutes, until golden.
What I've learned
- If the dough is very sticky I add a little flour, but carefully, never too much. The longer I knead, the easier it is to handle.
