Alfajores Draft

Small, tender alfajores made with cornstarch; I sandwich them in pairs with dulce de leche and roll them in coconut.

How I make it

Dough

  1. Beat the butter and powdered sugar in a stand mixer with the paddle until smooth and fluffy.

  2. Add the yolks and beat until even.

  3. Sift together the pudding mix, cornstarch, flour, baking powder and baking soda, add to the mixture and mix just until a uniform dough forms.

  4. Shape into a ball, wrap in plastic wrap and chill for 2 hours.

Baking

  1. Preheat the oven to 340°F (170°C).

  2. Roll the dough out to about ¼ inch (½ cm) thick and cut out 2-inch (5 cm) rounds.

  3. Arrange spaced apart on a baking sheet lined with parchment paper and bake for 10-12 minutes, until the edges start to turn golden and the centers are still pale.

  4. Let cool completely.

Assembly

  1. Spread a teaspoon of dulce de leche on half of the cookies and top each with a plain cookie to make a sandwich.

  2. Press gently so the dulce de leche peeks out at the edges.

  3. Roll the edges in coconut.

What I've learned

  • When I want lots of dulce de leche, I spread it all around the sides too before rolling in coconut.
