Almond Florentines Draft
My florentines, sliced almonds in a butter-honey caramel with candied fruit and dark chocolate on the bottom. I make them when I want a small, special cookie to serve.

How I make it
Cookies
In a saucepan, cook the butter, cream, glucose, vanilla and sugar until the mixture turns brown (not too dark).
Add the honey, and once the color is a nice brown, take it off the heat.
Add the flour and almonds and stir until the dry ingredients are coated.
Add the candied cherries and citrus peel and stir into one mass.
Cool the mixture at room temperature (not in the fridge!) for about 15 minutes.
Grease small round aluminum molds and press the mixture into them about 1/8 inch (4 mm) thick. Level it with your fingers.
Bake in an oven preheated to 320°F (160°C) for about 10 minutes.
Let cool and turn the cookies out. If there are traces of fat, blot gently with paper towels.
Coating
Once all the cookies are dry, melt the chocolate in the microwave or over a double boiler.
Spread chocolate over the underside of each cookie with a small offset spatula, then comb it with a decorating comb.
Serve once the chocolate has set.
What I've learned
- I cool the mixture at room temperature, not in the fridge; it's full of sugar and cools well on its own.
