Apple Puff Pastry Galettes Draft
Sugared puff pastry strips topped with a tight row of thin apple slices, butter and brown sugar, baked until golden and served warm.

What you need
How I make it
Pastry
Lay the puff pastry on the counter, sprinkle with 100 g (1/2 cup) of the sugar and roll it out to 1/8 inch (3 mm) thick.
Freeze the pastry sheet for 1 hour. If it is too big for the freezer, cut it in half.
Cut the pastry into rectangles about 4 x 8 inches (10 x 20 cm) and arrange them on a baking sheet lined with parchment paper.
Apples and baking
Peel and core the apples, cut them into quarters and slice thinly.
Arrange a tight row of apple slices on each pastry strip.
Brush the apples with a thin layer of melted butter.
Sprinkle the apples with the rest of the granulated sugar, then with the demerara sugar.
Bake in an oven preheated to 375°F (190°C) for about 30 minutes, until the pastry is golden brown.
Take out of the oven and serve warm.
What I've learned
- I sometimes swap the apples for other fruit, like thin slices of pineapple, apricots, plums or pears. The fruit should be fresh.
- I can freeze the galettes before baking and bake them straight from the freezer, following the same directions, whenever I want them warm.
