Thumbprint Cookies Draft
Crumbly pale butter cookies pressed with a thumbprint, which I fill after baking with Nutella, chocolate spread, jam or dulce de leche.

How I make it
In a food processor with the steel blade, pulse the butter, flour and powdered sugar into crumbs. A mixer works too.
Add the oil and process until the dough comes together.
Preheat the oven to 320°F (160°C).
Roll the dough into balls a bit smaller than ping-pong balls and arrange on a baking sheet lined with parchment paper.
Press your thumb into each ball almost all the way down, without breaking through, to make a well for the filling.
Bake for about 10 minutes. The cookies should stay pale.
Let cool slightly and pipe or spoon the filling into the wells.
What I've learned
- The dough cracks a little when you press in your thumb, and that's fine.
- The cookies firm up only after they come out of the oven, so I don't wait for them to brown.
- The well flattens a bit during baking; don't worry.
