Butter Hazelnut Crescent Cookies Draft

Tender crescents from a butter dough with hazelnuts and a splash of brandy, which I dust with powdered sugar and keep in an airtight tin.

How I make it

  1. In a stand mixer fitted with the paddle, beat the butter, powdered sugar, yolks, vanilla and brandy for about 5 minutes, until light and fluffy.

  2. Add the hazelnuts, baking powder and flour and mix until a dough forms.

  3. Gather the dough and chill for 1 hour.

  4. Preheat the oven to 350°F (180°C).

  5. Roll the dough into a rope about ¾ inch (2 cm) thick and cut into pieces about 2¾ inches (7 cm) long.

  6. Curve the pieces into crescents on the baking sheet, leaving space between them.

  7. Bake for about 15 minutes, or until they just start to turn golden.

  8. Let cool slightly and dust with powdered sugar. Store in an airtight container.
