Brie and Olive Rolls Draft
Yeast rolls with cubes of brie, black olives and chives, baked with steam in a very hot oven; I serve them with olive oil, tapenade and cheeses.

How I make it
Dough
In a bowl, mix the yeast, water, olives, sugar and chives.
In a separate bowl, mix the flour, salt and cheese.
Combine the two mixtures into a uniform dough and knead for 7 minutes, until elastic.
Shape the dough into 2-inch (5 cm) balls and arrange them on a floured baking sheet.
Let rise for about 1 hour, or until doubled.
Baking
Preheat the oven to 480°F (250°C) and put a pan of boiling water on the oven floor.
Score each ball with a serrated knife, no deeper than ½ inch (1 cm), so the steam can escape.
Bake for 13 minutes, then lower the oven to 340°F (170°C) and bake 30 minutes more, until golden and a toothpick comes out dry.
Serve with olive oil, tapenade and cheeses.
