Chocolate Alfajores Draft
Tender cornstarch sandwich cookies filled with chocolate truffle and dipped in a bittersweet chocolate coating.

How I make it
Dough
In a stand mixer with the dough hook, mix the cornstarch, flour, sugar, baking powder and butter until crumbly.
Add the yolks and cream and mix just until the dough comes together.
Wrap in plastic wrap and refrigerate for at least 1 hour.
Baking
Preheat the oven to 265°F (130°C).
Roll the dough out on a floured surface to ⅛ inch (3 mm) thick and cut out 1½-inch (4 cm) rounds.
Arrange on a baking sheet lined with parchment paper and bake for 20 minutes, until lightly golden. Let cool.
Filling and coating
Transfer the filling to a piping bag and pipe onto half of the cookies. Top each with a plain cookie and press gently.
Bring the cream to a boil, pour over the chocolate and stir until smooth.
Dip the cookies in the chocolate, coating the whole top or half of it.
Transfer to an airtight container and store in the fridge.
