Chocolate Marzipan Mousse Draft

Dark chocolate mousse in individual glasses, with a marzipan heart pressed against the side of each glass and chocolate pearls on top.

How I make it

  1. Sprinkle the gelatin over the cold water and let it soak.

  2. Heat half the cream (1 cup) in a saucepan until just about to boil.

  3. Pour the hot cream over the chocolate pieces in a bowl and stir until smooth.

  4. Leave for 10 minutes at room temperature, then add the soaked gelatin and stir until smooth and even.

  5. Whip the remaining cream to soft peaks and gently fold it into the chocolate mixture.

  6. Roll out the marzipan and cut out hearts. Press a marzipan heart against the side of each glass.

  7. Fill the glasses with the mousse and refrigerate until set.

  8. Garnish with chocolate pearls or grated chocolate.
