Chocolate Cookies with a Krembo Surprise Draft

Soft chocolate cookies with a puffed marshmallow half hidden under a chocolate coating, like a little Krembo, and I serve them warm.

How I make it

Cookies

  1. Preheat the oven to 350°F (180°C).

  2. In a stand mixer with the paddle, beat the butter, both sugars, the chocolate spread and the vanilla until creamy.

  3. Add the egg and mix until combined.

  4. Add the flour, cocoa, baking soda and salt and mix until the dough is uniform.

  5. Roll the dough by hand into cherry-tomato-size balls and place on a baking sheet lined with parchment paper.

  6. Bake for 5-7 minutes, until puffed and cracked but still slightly soft.

  7. Leave the oven on. Take out the tray and carefully set a marshmallow half, cut side down, on each hot cookie.

  8. Return to the oven for just 1 minute, until the marshmallows puff up a lot and begin to crack.

Coating

  1. Melt the chocolate in the microwave until smooth and stir in the oil.

  2. Spoon a teaspoon of coating over each cookie to hide the marshmallow, and serve warm.

What I've learned

  • The marshmallow should only soften and puff, not lose its shape, so I never leave it in the oven longer than a minute.
  • I keep them in a single layer in an airtight container in the fridge and warm them in the microwave before serving.
