Chocolate Marzipan Cake Draft

A rich, moist chocolate cake with cubes of marzipan scattered on top. The recipe makes two cakes, and I like having a spare.

How I make it

  1. Preheat the oven to 325°F (160°C) and set out two 12-inch (30 cm) half-round (Rehrücken) or loaf pans.

  2. Melt the chocolate and butter in the microwave or over a hot water bath (bain-marie) and stir until smooth.

  3. Beat the eggs with the sugar and salt in a mixer on medium speed for about 5 minutes, until pale and fluffy.

  4. Add the chocolate mixture and mix until even.

  5. Lower the mixer speed, add the flour, baking powder and milk and mix until smooth.

  6. Pour into the pans, smooth the tops and scatter the marzipan over them.

  7. Bake for 40-45 minutes, until a toothpick inserted in the center comes out dry with a few moist crumbs.

What I've learned

  • I keep the cake covered at room temperature for up to 3 days.
  • Sometimes I add a ganache glaze: I bring 1/2 cup heavy cream to a boil in a small saucepan, pour it over 5 oz (150 g) chopped bittersweet chocolate, wait a minute and stir until smooth. I cool it to room temperature and pour it over the cake.
