Classic Chocolate Mousse Draft
My classic chocolate mousse, made with just chocolate, eggs and a little powdered sugar, in individual dishes I can make two days ahead.

What you need
How I make it
Melt the chocolate with the water and let cool for 2-3 minutes.
Lightly beat the yolks and stir them into the melted chocolate until smooth.
Whip the egg whites on medium speed. When they start to foam, lower the speed and gradually add the powdered sugar.
Once all the sugar is absorbed, gradually raise the speed to high and whip for about 5 minutes, until soft, silky and stable but not dry.
Stir a quarter of the whites into the chocolate, then gently fold in the rest.
Transfer to a pitcher and pour the mousse into the serving dishes.
Cover with plastic wrap and refrigerate for at least 2 hours, or until set.
What I've learned
- The mousse keeps in the fridge for up to two days, and it freezes well too.
