Ingredients: 3 large eggs; 1½ cups sugar; 1 cup heavy cream; 1 cup unsweetened shredded coconut; 2 tbsp vanilla instant pudding mix; ¾ cup vegetable oil; 1½ cups all-purpose flour; 1½ tsp baking powder

A simple coconut cake made with heavy cream and oil, all mixed in one bowl, for when I want a moist cake with coffee.

How I make it

Beat the eggs with the sugar until light and airy.
Add the wet ingredients (the cream and oil) and mix.
Add the dry ingredients (the coconut, pudding mix, flour and baking powder) and mix until smooth.
Pour into a greased pan.
Bake in an oven preheated to 350°F (180°C) for about 45 minutes, until a toothpick comes out dry.
