Coffee Pecan Cookies Draft

Coffee-flavored butter cookies with chopped pecans, sliced from a log rolled in brown sugar.

How I make it

  1. Dissolve the coffee in the boiling water and let it cool slightly.

  2. Process the flour, butter, powdered sugar, vanilla and salt in a food processor.

  3. Add half of the yolk and the coffee extract and process again.

  4. Add the pecans and process until fully worked into the dough.

  5. Chill the dough for 20-30 minutes.

  6. Divide the dough in half and shape 2 logs.

  7. Whisk the remaining half yolk with the milk, brush it over the logs and roll them in the brown sugar.

  8. Slice the logs about ⅓ inch (7-8 mm) thick and arrange on a baking sheet lined with parchment paper.

  9. Bake in an oven preheated to 325°F (160°C) for 12-15 minutes.

What I've learned

  • I freeze the dough, and it keeps well for about a month. I thaw it for about half an hour before baking.
