Coffee Chocolate Marble Loaf Draft

An oil loaf cake with coffee and coconut that I marble with a chocolate-coffee mixture and take out of the oven while it's still moist.

How I make it

  1. Preheat the oven to 340°F (170°C) and grease a loaf pan.

  2. In a large bowl, whisk the sugar, oil, eggs, egg white and salt by hand until smooth.

  3. Sift in the flour and baking powder, add the coffee and coconut, and whisk just until the batter starts to come together.

  4. Add the chopped chocolate and stir until evenly distributed.

  5. In a separate bowl, mix the melted chocolate, coffee and milk until smooth.

  6. Stir a third of the cake batter into the chocolate mixture until well combined.

  7. Pour the plain batter into the pan and the chocolate batter on top. Swirl with a knife or long skewer to marble.

  8. Bake for 30-40 minutes, until a toothpick inserted in the center comes out with moist crumbs.

What I've learned

  • I use a teaspoon of instant coffee in the chocolate mixture, but you can add more if you like a stronger coffee flavor.
