Crepes Draft

Thin crepes with browned butter, lemon zest and a touch of rum, which I serve warm with sugar, powdered sugar or chocolate spread.

How I make it

Batter

  1. Make beurre noisette, a nutty browned butter. Melt the 5 tbsp (75 g) butter in a pan and cook until golden brown.

  2. In a bowl, mix the flour, sugar and salt.

  3. Add the eggs and cream and whisk well.

  4. Slowly whisk in the milk, the browned butter and the rest of the ingredients.

  5. Refrigerate the batter for 15 minutes.

Cooking

  1. Heat a tablespoon of butter in a wide, shallow pan.

  2. Pour 2 tablespoons of batter into the pan and immediately spread it thin across the whole pan with a spatula or flat wooden spoon.

  3. Cook until small bubbles form, flip carefully with the spatula and cook 10 seconds more.

  4. Stack the finished crepes on a plate so they stay warm.

  5. Serve right away with a little sugar, powdered sugar or chocolate spread.
