Dulce de Leche Alfajores Draft
My alfajores, soft pale cornstarch cookies sandwiched with dulce de leche and rolled in coconut around the edges.

What you need

How I make it
Preheat the oven to 350°F (175°C).
Beat the sugar and butter (or margarine) with a mixer until light and fluffy.
Add the eggs one at a time, beating well after each.
Add the vanilla sugar and baking powder and beat a little more, until even.
Sift the cornstarch into another bowl and add it gradually while beating, until absorbed and the dough is sticky.
Sift the flour over it and beat just until absorbed.
Gather the dough into a ball and place on a floured surface. Roll out to ¼ inch (½ cm) thick.
Cut circles no larger than 1¼-1½ inches (3-4 cm) with a cookie cutter or small glass. Arrange on a baking sheet lined with parchment paper.
Bake for 7-10 minutes, just until set and still pale. Start on the lower third of the oven and move to the middle if needed.
Cool completely.
Sandwich pairs of cookies with dulce de leche and roll the edges in coconut.
What I've learned
- I take the cookies out while they're still pale, before they turn golden at all.
- Store in a closed container.
