Dulce de Leche and Coconut Truffles Draft
Little no-bake balls of crushed biscuits, dulce de leche and coconut, made without a food processor. I make them when I want something sweet and quick.

How I make it
Put the biscuits in a plastic bag, slip it into a second bag and pound with a meat mallet or rolling pin to a fine powder. A few lumps are fine.
Melt the butter in the microwave, then add the biscuits, dulce de leche and coconut. Mix well.
Add the milk and knead well with your hands until the mixture is glossy and sticky.
Chill the mixture for at least 1 hour.
Roll into small balls and coat them in coconut.
Set each truffle in a paper candy cup and keep refrigerated.
What I've learned
- I recommend Maria biscuits, the round plain cookies like the base of a krembo. They're really good here.
- Knead thoroughly, really squeezing the mixture between your hands.
- In a real rush you can skip the chilling or give it just 15 minutes, but at least an hour is best.
