Easy Bulgarian Boyikos Draft
Salty cheese boyikos from a dough mixed by hand, with no yeast and no rolling pin. I make them when I want a quick cheese pastry.

How I make it
Preheat the oven to 350°F (180°C) and line two baking sheets with parchment paper.
Put all the dough ingredients in a bowl and mix by hand until the dough is soft and slightly sticky.
Quick option: pinch off small pieces of dough and roll into balls the size of cherry tomatoes. Place 1¼ inches (3 cm) apart on the sheets and flatten slightly.
Second option, for even edges and a more cookie-like look: flour the counter, pat the dough out by hand to about 1½ inches (4 cm) thick and cut 1-1¼ inch (2-3 cm) rounds with a glass. Place 1¼ inches (3 cm) apart on the sheets.
Brush each one with beaten egg and sprinkle with sesame or nigella seeds.
Bake for about 15 minutes, until golden.
Serve right away, or store in an airtight container for up to 2 days or in the freezer for up to 2 weeks.
What I've learned
- I taste before adding salt, since how much you need depends on how salty the Bulgarian cheese or feta is.
- No rolling pin needed; I just pat the dough flat by hand.
