How I make it
Gently melt the chocolate and butter together into a smooth, fairly thin mixture.
Add the eggs, yolks and the pinch of salt and whisk well.
Add the sugar and whisk again.
Sift in the flour and fold gently, just until the batter is even.
Divide among the cups of a muffin pan or individual mugs (not porcelain).
Bake in an oven preheated to 350°F (180°C) for 7-12 minutes, until the tops look almost set except for a circle in the center that wobbles slightly when you shake the pan.
Serve right away with whipped cream or ice cream.
What I've learned
- The batter makes 6 cakes in a muffin pan or about 4 medium individual mugs.
- Baking time varies from oven to oven, so I do a test bake first to pin down the exact timing.
