Lower-Fat Tiramisu Draft

A tiramisu where half the mascarpone is swapped for 5% ricotta, so it's lighter and just as creamy.

How I make it

Cream

  1. Beat the egg whites in a stand mixer to stiff peaks and transfer to another bowl.

  2. Beat the yolks and sugar for a few minutes, until very thick.

  3. Add the wine (or rum) and beat a little more.

  4. Add the mascarpone and ricotta and beat well until smooth.

  5. Gently fold in the beaten whites until incorporated.

Assembly

  1. Spread a few spoonfuls of the cream over the bottom of a 6 x 10-inch (16 x 25 cm) dish.

  2. Pour the cooled coffee into a shallow bowl. Dip the ladyfingers quickly on both sides and lay them over the cream, a little apart.

  3. Cover with half of the remaining cream.

  4. Dip the remaining ladyfingers, arrange them the same way and top with the rest of the cream.

  5. Smooth the top, cover with plastic wrap and refrigerate for at least 5 hours and up to a day.

  6. Before serving, dust with cocoa powder, cut into squares and serve.

What I've learned

  • I find mascarpone at regular supermarkets.
