Everyday Soft Rolls Draft
Simple yeast rolls with egg and oil that I shape into knots or rounds and top with sesame or nigella seeds.

What you need

How I make it
Mix all the dough ingredients, keeping the yeast away from direct contact with the salt.
Knead vigorously for 10 minutes.
Put the dough in a bowl, cover with plastic wrap and let rise in a warm spot for about 1 hour.
Divide into 10 pieces. Roll each into a rope and tie into a knot, or leave as a medium round.
Place the rolls on a baking sheet lined with parchment paper and let rise again in a warm spot.
Brush with the beaten egg white and sprinkle with sesame or nigella seeds.
Bake in an oven preheated to 350°F (175°C) for about 20 minutes.
What I've learned
- I use 1½ tablespoons of yeast instead of 1.
- I work with oiled hands and rub a little oil on the counter too. Olive oil gives the rolls a lovely flavor.
- I also make braided challahs from the same dough.
