Filled Pastry Domes Draft
Individual pastries of flaky butter dough that I shape in a small bowl and fill with yellow cheese and mushrooms in white sauce, or with a meat filling.
The kosher version here is dairy, with the mushroom filling. For a kosher meat filling, make the dough with margarine and leave out the cheese.

How I make it
Dough
Mix the dough ingredients into a smooth dough.
Roll out a sheet the size of a small bowl and line the bowl with it.
Lay a slice of yellow cheese over the dough.
Filling
For the mushroom filling, sauté the mushrooms and onion in a little butter and add the white wine.
Make a roux with the butter and flour, add a little milk and the nutmeg, and mix it with the sautéed mushrooms.
For the meat filling, cook the ground beef with the onion and crushed tomatoes. No roux is needed.
Assembly and baking
Spoon the filling over the cheese.
Cover the filling with another sheet of dough, press the edges to seal and turn out onto a baking sheet lined with parchment paper.
Brush the dough with egg and bake in an oven preheated to 320°F (160°C) for about 25 minutes.
