How I make it

Preheat the oven to 350°F (180°C).
Line an 8-inch (20 cm) square pan with parchment paper and coat the paper with cooking spray.
Mix the cookie crumbs with the butter and press into the bottom of the pan.
Scatter a layer of coconut, chocolate chips and pecans on top, then add the rest of the chocolate chips and the crumbled wafers.
Pour the condensed milk over everything.
Bake for about 25 minutes, until set and golden. Cool completely, ideally for 2 hours in the fridge.
Topping and serving
Heat the cream and chocolate in a small pan, stirring until smooth.
Pour over the bars and freeze for 10 minutes, until the topping sets.
Cut into squares, place each in a small paper cup and serve.
What I've learned
- Two hours in the fridge before topping makes the bars much easier to cut.
