Fudgy Chocolate Chip Cookies Draft

Soft, fudgy chocolate chip cookies with cocoa, instant coffee and a splash of amaretto, and coarsely chopped bittersweet chocolate instead of chips.

How I make it

  1. Preheat the oven to 350°F (180°C).

  2. Whisk together the flour, cocoa and baking soda.

  3. In a stand mixer, beat the butter with both sugars for 3 minutes.

  4. Add the eggs one at a time, then the vanilla, amaretto and instant coffee.

  5. Turn the mixer to low and gradually add the flour mixture.

  6. Once the flour is fully absorbed, add the chopped chocolate and mix for one more minute.

  7. Line a baking sheet with parchment paper and drop spoonfuls of dough onto it, leaving room between them since the cookies spread as they bake.

  8. Bake for 10 minutes.

What I've learned

  • The cookies are still very soft when they come out of the oven, and that's fine; they firm up as they cool.
  • Sometimes I mix things up with coarsely chopped white chocolate, nuts or raisins, added along with the chocolate.
