How I make it
Pudding
In a 2-quart saucepan, mix the sugar, cornstarch, cocoa and salt.
Add a little of the milk and stir into a paste.
Slowly whisk in the rest of the milk, then the 1/2 cup cream.
Heat over medium heat, stirring. When it comes to a simmer, lower the heat and keep cooking for a few minutes, stirring constantly, until thickened.
Add the chocolate and cook for another minute or two, stirring, until completely melted. Remove from the heat.
Add the vanilla and stir well.
Let cool for about 5 minutes, stirring now and then so no skin forms.
Pour about 1/3 cup pudding into each serving cup. Let cool, cover and refrigerate for at least 2 hours.
Whipped cream
Whip the cream with the sugar and pipe it over the pudding.
What I've learned
- I add just a little milk at first; pouring it all in at once can make lumps.
- The pudding keeps in the fridge for a week, even a little longer.
- It can also be made in jars and given as a gift.
