Honey White Bread Draft
A soft white sandwich bread with milk, butter and honey that I bake in two loaf pans.

How I make it
Dough
In a mixer bowl that isn't too cold, combine the water, sugar and yeast, stir gently and let stand 5 minutes.
Add the milk, butter and honey.
With the dough hook running, add the yolks, 3 cups of the flour and the salt, and mix on low speed for 5 minutes.
Add 2 more cups of flour, raise the speed to medium and gradually add more flour until the dough is no longer sticky. Mix 8 minutes more.
Turn the dough out and knead by hand for about a minute, until elastic.
Butter a bowl, coat the dough on all sides and let rise about 1 hour, until doubled.
Shaping and baking
Grease two 9x5-inch (23x13 cm) loaf pans.
Punch down the dough and divide it in half. Shape each half into a loaf and place in a pan.
Let rise again for about 1 hour, until doubled. Meanwhile, preheat the oven to 350°F (180°C).
Brush the loaves with the egg white and bake for 40-45 minutes.
