Individual Potato Cakes for Passover Draft
Individual potato cakes of thin slices soaked in cream and baked in a muffin tin until deep golden, a dairy side I make for Passover.
I bake these in a muffin tin.

How I make it
Put the cream in a bowl and season with salt, black pepper and nutmeg.
Slice the potatoes very thin and add them to the cream. Make sure every slice is well coated and let stand for 30 minutes.
Preheat the oven to 350°F (180°C).
Cut squares of aluminum foil the size of the muffin cups. Line each cup with foil and grease with the butter.
Layer the potato slices neatly in each cup, up to the rim. Pour the cream left in the bowl over the top.
Bake for 35-40 minutes, until the top is set and deep golden.
Remove from the oven, let rest briefly and unmold.
