Instant Pudding Layer Cake Draft

A layered instant pudding cake, with an airy chocolate base, whipped vanilla cream and a cold chocolate cream on top.

How I make it

Cake

  1. Separate the eggs. Beat the whites with the sugar to stiff peaks.

  2. In a separate bowl, mix the yolks with the chocolate pudding mix and baking powder.

  3. Fold the whites into the yolk mixture.

  4. Pour into an ungreased pan and bake in an oven preheated to 400°F (200°C) for about 30 minutes. Let cool.

Creams

  1. In a pot over low heat, warm the chocolate, butter and cream until smooth. Remove from the heat and chill.

  2. Whip the vanilla pudding mix with the cream and milk until stiff.

  3. Spread the vanilla cream over the cake and top with the cold chocolate cream.

What I've learned

  • I use 400 ml (about 1⅔ cups) of liquid in total per package of pudding mix.
  • I sometimes add a splash of liqueur to the chocolate cream.
