Jam Sandwich Cookies Draft

Simple parve cookies that I sandwich in pairs with strawberry jam, the top one with a hole so the jam shows through.

How I make it

  1. Mix all the ingredients except the jam into a smooth dough.

  2. Roll the dough out on a floured surface and cut out rounds.

  3. Cut a hole in the center of half of the rounds and leave the other half whole.

  4. Place on a baking sheet lined with parchment paper and bake in an oven preheated to 400°F (200°C) until lightly golden.

  5. Once cool, spread jam on each whole round and top with a round with a hole.

  6. Dust with powdered sugar before serving, if you like.
