Kosher for Passover Tiramisu Draft

A Passover tiramisu of wine cookies dipped in coffee and brandy, mascarpone cream and layers of candied nuts, which I make as a holiday dessert.

How I make it

Cream

  1. In a completely dry stainless steel bowl, beat the egg whites to stiff peaks.

  2. In another bowl, beat the yolks and sugar for 3-4 minutes, until pale and fluffy.

  3. Add the mascarpone, powdered sugar and vanilla sugar to the whites and mix.

  4. Fold the white mixture into the yolks.

  5. Divide the cream into 3 parts. Set two aside, and add cocoa to the third until it turns light brown.

Assembly

  1. Mix the coffee and brandy and dip the wine cookies in it.

  2. Line the bottom of a pan with the soaked cookies and spread one part of the white cream over them. Top with a thin layer of the ground candied nuts.

  3. Spread the brown cream over the nuts and top with another layer of nuts.

  4. Fill a piping bag with the remaining white cream and pipe small peaks over the top.

  5. Refrigerate until fully set.

  6. Dust with cocoa powder before serving.
