How I make it
Cake base
Beat the egg whites with the sugar until stiff.
Gently but thoroughly fold in the yolks and the chocolate pudding mix until no powder remains.
Grease and flour a round springform pan and pour in the batter.
Bake in an oven preheated to 350°F (180°C) for only 30 minutes. The cake stays slightly moist, and a knife inserted in the center comes out with crumbs.
Cool to room temperature, then chill in the fridge.
Vanilla layer
Make pudding from the vanilla pudding mix, the milk and the cream, and let it cool.
Spread the pudding over the cooled cake base and chill for 2 hours.
Chocolate cream
Bring the cream just to a simmer and remove from the heat.
Break in the chocolate and add the vanilla. Let stand 5 minutes, then stir until smooth and dark.
Cool to room temperature.
Pour the chocolate cream over the vanilla layer and spread evenly.
Chill for at least 2 hours and serve cold.
What I've learned
- The cake sinks as soon as it comes out of the oven and looks like a flat pita. That's fine; it's supposed to.
