Leek and Beef Patties Draft
Patties made mostly of caramelized leeks with a little ground beef, which I bake in the oven instead of frying.

How I make it
Clean the leeks thoroughly and chop finely.
Cook the leeks in olive oil in a hot skillet over medium-low heat for about 20 minutes, until they shrink down and turn caramel-colored.
Transfer the leeks to a bowl with the beef, eggs, matzo meal and spices and knead until the mixture is even and holds together.
Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper and rub it with 2-3 tbsp olive oil.
With wet hands, shape ping-pong-ball-sized patties and set them on the oiled parchment.
Bake for about 20 minutes, until the tops are deep golden.
