Leikach Sponge Cake Draft

A light, airy leikach sponge made from just eggs, sugar and flour, with no oil or baking powder; all the lift comes from the whipping.

How I make it

  1. Preheat the oven to 350°F (180°C).

  2. Sift the flour into a bowl, sprinkle in the salt and set aside.

  3. Carefully separate the whites and yolks into two bowls, making sure no yolk gets into the whites.

  4. Put the whites in a mixer bowl and start whipping. After about a minute, add 1 tbsp of the sugar and keep whipping until glossy and firm.

  5. In another mixer bowl, beat the yolks on the highest speed until they double in volume.

  6. Gradually add the rest of the sugar, a few spoonfuls at a time. Add the vanilla last and finish beating.

  7. Gently fold the beaten yolks into the whites, then fold in the flour.

  8. Transfer to a lightly greased pan.

  9. Bake for 20-30 minutes, until golden and springy to the touch.

  10. If you like, dust the cooled cake with a little powdered sugar.

What I've learned

  • I make sure not a drop of yolk gets into the whites, or they won't whip.
  • Beating the yolks to double their volume takes a while, so be patient.
