Lemon Squares Draft

How I make it

Base

1. Preheat the oven to 340°F (170°C).

2. In a food processor, pulse the flour and butter until crumbly.

3. Add the sugar and keep processing until a dough forms.

4. Press into the bottom of the pan and bake for about 20 minutes, until golden.

Lemon topping

1. Zest the lemon and squeeze the juice.

2. Whisk the eggs with the lemon zest and juice, flour, baking powder and salt until smooth.

3. Pour over the baked base and return to the oven until the topping is set.

4. Let cool, cut into squares and dust with powdered sugar.
