Macarons Draft

Colorful macarons made from egg whites and almond flour, which I fill with marzipan mixed with pistachio, strawberry jam or orange marmalade to match each color.

How I make it

Cookies

  1. In a mixer, beat the egg whites and superfine sugar to stiff peaks.

  2. Mix the powdered sugar with the almond flour and gently fold into the meringue.

  3. Stir in a few drops of food coloring until you reach the color you want.

  4. Line a baking sheet with parchment paper. Transfer the batter to a piping bag and pipe macarons in the size you like, ideally ¾-1 inch (2-3 cm) across.

  5. Bake for about 13 minutes in an oven preheated to 300°F (150°C).

  6. Take them out, remove them from the parchment right away and let cool to room temperature.

Filling and assembly

  1. Put the marzipan in a small bowl and microwave for a few seconds, until soft.

  2. Mix in the flavoring you chose (the ground pistachios or one of the jams) and transfer to a piping bag.

  3. Pair up the macarons by size. Pipe filling onto the flat side of one and top with its partner.

  4. Store at room temperature, or freeze for longer keeping.

What I've learned

  • They freeze well, but in my experience they disappear the moment they're ready.
