Marble Cookies Draft

Butter and coconut cookies swirled with melted bittersweet chocolate, mixed only a little so the marble pattern stays.

How I make it

  1. Preheat the oven to 350°F (180°C) and line baking sheets with parchment paper.

  2. Melt the chocolate in the microwave for about 15 seconds. If it isn't creamy yet, heat another 15 seconds.

  3. In a stand mixer with the paddle, mix the flour, baking powder, coconut, sugar, butter and egg into a dough.

  4. Add the melted chocolate and swirl it in with a knife just a little, to make a marble pattern.

  5. Turn out onto the counter and pinch off pieces of the size you want.

  6. Roll each piece into a ball, handling it as little as possible, and space them out on the sheets.

  7. Bake for 15-17 minutes, until golden and lightly cracked.

  8. Dust with powdered sugar while still warm, if you like.

What I've learned

  • I roll the balls as little as possible so the marble pattern doesn't get lost.
