Marzipan Chocolate Chip Cookies Draft

Crisp butter cookies with marzipan, hazelnuts and chocolate chips, where I fold the flour in gently to keep them crisp.

How I make it

  1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.

  2. Mix the butter, sugar and marzipan.

  3. Add the salt, vanilla and eggs and mix again.

  4. In a separate bowl, mix the flour and baking soda.

  5. Fold the flour into the butter mixture a portion at a time, folding gently until absorbed before adding more.

  6. Fold in the hazelnuts and chocolate chips (or gianduja chips).

  7. Shape balls the size of a small ping-pong ball (about 1 oz, 30 g each) by hand or with an ice cream scoop.

  8. Place the balls on the sheet, spaced apart, and flatten them.

  9. Bake for 10-15 minutes, until golden.

What I've learned

  • I fold the flour in rather than beating it, which keeps the cookies crisp.
  • Leave room between the cookies on the sheet.
