Matzah and Cheese Balls Draft

Fried balls of softened matzah, cheese and eggs that I make for Passover and serve hot.

How I make it

  1. Put the broken matzah in a bowl, cover with boiling water and let stand for about 3 minutes.

  2. Drain, squeeze out well and return to the bowl.

  3. Add the cheeses, sour cream, eggs, salt and pepper and mix until evenly combined.

  4. Heat the oil in a skillet. Shape the mixture into balls, by hand or with 2 spoons.

  5. Fry on both sides until golden.

  6. Drain on a plate lined with paper towels and serve hot.
