Matzah Cake with Chocolate Cream Draft

A no-bake layer cake of milk-dipped matzah and whipped chocolate ganache that I make for Passover.

How I make it

Chocolate cream

  1. Pour the cream into a saucepan and bring to a boil over low heat. As soon as it boils, turn off the heat and take the pan off the stove.

  2. Add the chocolate and whisk until completely melted.

  3. Let cool, then refrigerate for about 4 hours, until firm and completely cold.

  4. Transfer to a mixer bowl and whip on medium speed until it softens, puffs slightly and turns lighter in color.

Assembly

  1. Pour the milk into a wide, shallow dish that fits the matzahs.

  2. Dip a matzah in the milk on both sides, leave it a few seconds, then lift it out onto a flat plate.

  3. Spread chocolate cream over the matzah with a knife to cover it completely.

  4. Dip another matzah, lay it on top and cover it with cream too. Repeat with the rest of the matzahs.

  5. Cover the sides of the cake with cream. Decorate with coconut or crushed nuts, if you like.

  6. Refrigerate the cake in an airtight container for a few hours.
