Milk Chocolate and Coconut Tartlets Draft

Little shortcrust tartlets baked in a mini muffin pan, which I fill with toasted coconut and a milk chocolate cream.

How I make it

Dough

  1. Cut the butter into medium cubes.

  2. Put the butter in a food processor, add the flour, yolk, glucose and powdered sugar and pulse into large crumbs.

  3. Turn out, shape into a ball by hand, wrap in plastic wrap and chill for at least 2 hours.

Filling

  1. Heat the chocolate and cream in a saucepan over medium heat until smooth.

  2. Take off the heat and let cool to room temperature.

Assembly

  1. Toast the coconut lightly in a skillet until golden.

  2. Preheat the oven to 340°F (170°C).

  3. On a floured surface, roll the dough to about ⅛ inch (0.4 cm) thick and cut out circles about 3 inches (8 cm) across, a little larger than the cups of the pan.

  4. Press the circles into the cups of a mini muffin pan, line each with foil and fill with a few dried beans.

  5. Bake for 7 minutes and let cool. Remove the beans and foil.

  6. Put a little coconut in the bottom of each shell, top with the chocolate cream, and finish with a little more coconut.

  7. Chill for at least 20 minutes.
