Mongolian Beef Draft
My Mongolian beef, cornstarch-coated strips of beef fried and tossed in a soy, ginger and brown sugar sauce. I serve it with rice.

How I make it
Sauce
In a saucepan over medium heat, warm the oil gently without letting it get too hot.
Add the garlic and ginger, then immediately the soy sauce and water.
Stir in the brown sugar until it dissolves.
Raise the heat and cook for 2-3 minutes to reduce. Remove from the heat.

Cut the beef into strips a little over 1/4 inch (1/2 cm) thick.
Dredge each strip in cornstarch and let the coated beef sit for 10 minutes so the coating sets.
Meanwhile, heat the frying oil in a deep skillet or wok over medium heat, not so hot that it smokes.
Fry the beef, stirring constantly, for about 2 minutes, until browned. Lift out with a slotted spoon onto paper towels.
Blot off the excess oil and add the beef to the pot with the sauce.
Return the pot to medium-low heat, add the green onions and heat until the sauce is hot.
Serve with rice.
