New York Chocolate Fudge Squares Draft

New York chocolate fudge, a thin, rich layer of chocolate and butter with a little flour and coffee liqueur that I chill and cut into bite-size squares.

How I make it

  1. Preheat the oven to 340°F (170°C). Line a 10x12-inch (25x30 cm) pan with parchment paper and grease it lightly.

  2. Whip the egg whites well with 2 tbsp of the sugar.

  3. In a separate bowl, beat the yolks well with the remaining 2 tbsp sugar.

  4. Melt the chocolate and butter in a double boiler, a pot set over a larger pot of gently simmering water, without letting the top pot touch the water.

  5. Let the chocolate mixture cool slightly, then fold in the beaten yolks.

  6. Gradually add the flour and liqueur, a little at a time, folding until absorbed.

  7. Fold in the whipped egg whites.

  8. Pour the batter into the pan and bake for 10-12 minutes.

  9. Let cool, then refrigerate for at least 4 hours.

  10. Turn out onto a work surface and cut into small bite-size squares.

What I've learned

  • I also melt the chocolate and butter in the microwave: 30 seconds (no longer!), stir, and repeat until fully melted.
  • To bring out the chocolate flavor, I use chocolate with a high cacao percentage.
  • For a milder chocolate flavor, I swap some of the bittersweet chocolate for milk chocolate.
