How I make it
Crust
Mix the crushed biscuits with the melted butter.
Transfer to a 9-inch (24 cm) round pan and press with a spoon into the bottom only, not up the sides. Refrigerate.
Filling
Whip the 1½ cups of cream to stiff peaks and refrigerate.
Process the cream cheese and sugar until completely smooth, then fold in the whipped cream.
Break the Oreos into small pieces, about the size of a fingernail. Don't crush them, just break them.
Stir the Oreos into the cream mixture and pour over the crust.
Cover and freeze for at least 4 hours, preferably overnight.
Topping
Bring the remaining cream to a gentle simmer in a small pot and remove from the heat.
Break in the chocolate and wait 5 minutes.
Add the vanilla and stir well until the chocolate is completely melted.
Pour over the cake and return to the freezer for another 4 hours.
What I've learned
- You need cream with at least 32% fat; light cream won't whip.
- A 9-inch (24 cm) pan is best, but square pans or smaller or larger round ones work too.
