How I make it
Preheat the oven to 400°F (200°C).
In a bowl, whisk the eggs, lemon zest, sugar and vanilla with a fork or whisk.
Add the milk in a thin stream and whisk well.
Add all the flour at once and whisk until the batter is runny and almost smooth. A few small lumps are fine.
Melt the butter in an ovenproof skillet on the stove and swirl so the sides of the pan are coated too.
When the pan and butter are very hot, pour in the batter and put the pan in the oven, uncovered.
Bake for about 15 minutes, until the edges are browned and well puffed.
Bring it to the table and slice right away into wedges, like a pizza. Serve with maple and chocolate syrup.
