Papanash Cheese Latkes Draft

Sweet cheese latkes in the style of papanash, which I fry for Hanukkah and serve hot on sour cream with cherry jam.

How I make it

  1. In a bowl, mix the cheese, eggs, sugar, vanilla sugar and vanilla extract.

  2. Sift the self-rising flour into a separate bowl and add it to the cheese mixture.

  3. Cover the bowl with plastic wrap and chill for about 1 hour.

  4. Put the 1/4 cup flour in a small bowl, flour your hands, shape the mixture into latkes and set them on parchment paper.

  5. Pour about 1/2 inch (1 cm) of oil into a skillet and heat.

  6. Fry the latkes on both sides until golden and drain on a plate lined with paper towels.

  7. Set each hot latke on a spoonful of sour cream and drizzle a little cherry preserves on top.
