Passover Chocolate Cookies Draft
Flourless chocolate cookies I make for Passover, from powdered sugar, cocoa and eggs with plenty of chopped chocolate, which spread into thin cookies in the oven.

What you need

Chocolate drizzle (optional)
How I make it
Cookies
Preheat the oven to 350°F (180°C) and line a baking sheet with parchment paper.
Sift all the dry ingredients into a bowl.
Add the eggs and mix well. A food processor makes this easiest.
Add the chopped chocolate and mix.
Using two teaspoons, drop small mounds onto the sheet, leaving plenty of space between them.
Bake for 10 minutes.
Let the cookies cool completely before peeling them off the paper. Store in an airtight container.
Chocolate drizzle
Melt the chocolate in the cream with the coffee, let cool and drizzle over the cookies.
What I've learned
- I sift the dry ingredients; it makes the batter lighter.
- The cookies flatten and spread as they bake, so I leave big gaps between the mounds.
