How I make it
Melt the chocolate with the coffee and let cool. You can melt it in the microwave with 2 tbsp milk.
Separate the eggs.
Beat the butter with 2/3 cup sugar until creamy.
Add the chocolate, yolks, brandy and baking powder to the butter and keep beating. Mix in the walnuts.
In a separate bowl, beat the egg whites with 1/3 cup sugar until smooth and firm.
Gently combine the two mixtures.
Pour two thirds of the batter into a 9½-inch (24 cm) pan and bake at 340°F (170°C) for about 30 minutes.
Once the cake is cool, spread the remaining batter on top and serve.
What I've learned
- The pan really does need to be 9½ inches (24 cm).
