Fresh Pasta Dough Draft
My homemade pasta dough of flour, eggs and olive oil, mixed right on the counter and rolled through a pasta machine.

What you need
How I make it
Mound the flour on the counter and make a well in the center.
Put the rest of the ingredients into the well.
With a fork, start mixing the ingredients in the well, pulling in flour from the edges as you go, until the mixture turns thick and sticky.
Set aside some of the remaining flour and keep mixing, still adding flour, until the dough is slightly moist but not sticky.
Shape into a ball, wrap and let rest in the fridge for 20 minutes.
Take the dough out of the fridge and divide it into 8 pieces.
Roll one piece at a time through a pasta machine, keeping the rest covered until you roll them so they don't dry out.
Let the pasta rest briefly, and make the sauce in the meantime.
What I've learned
- For colored pasta, I add a vegetable purée made with very little water, plus a little extra flour.
- The dough keeps in the fridge for 2-3 days.
