Pear Cake with Brandy Draft

A simple stirred cake with sour cream and pear cubes soaked in brandy and brown sugar, which I bake in two small loaf pans.

How I make it

Pears

  1. Peel the pears, cut into ½-inch (1 cm) cubes and put them in a medium bowl.

  2. Add the brown sugar and brandy and mix well until all the pears are coated.

  3. Let stand at room temperature for about 30 minutes.

Cake

  1. Preheat the oven to 340°F (170°C) and grease 2 small loaf pans.

  2. In a large bowl, whisk the sugar and eggs by hand for 2-3 minutes, until smooth and fairly pale.

  3. Add the sour cream, oil, salt and vanilla and keep whisking until smooth.

  4. Sift in the flour and baking powder and add the almond flour. Fold with a spatula just until the flour disappears.

  5. Add the soaked pears with their liquid and mix until evenly combined.

  6. Divide the batter between the pans and sprinkle a little demerara sugar over each cake.

  7. Bake for 35-45 minutes, until a toothpick inserted in the center comes out with moist crumbs.

  8. Cool at room temperature and serve.
